Emperor's Trash


You need: (serves for 4)
250 g (9 oz) flour
250 g (9 oz) butter
30 g (1 oz) sugar
4 eggs
0.25 l (1.5 cups) milk
50 g (2 oz) raisins
salt

Mix first flour and milk only, add then the yolks, 150 g (5 oz) heated butter, a little salt and the beaten egg whites. Fill a baking tin with the rest of the molten butter and some centimeters (1+ inch) high with the dough, add the raisins on top and put it into a hot oven. When clear, tear it apart with forks, and sprinkle it with sugar.

Profound thanks to Josef Weisgram for the namegiving. When I was to translate the recipe into English, I had troubles with naming the dish. On my request to the austrian newsgroup, Josef offered this solution, which is a word to word translation of the German name.
To understand, you need to know the story of the "Kaiserschmarrn". Once upon a time Franz Joseph, Emperor of Austria, lost his way on hunting. Tired and hungry he reached a farmers house in the evening. Of course he could stay over night, but the farmers were poor people, and the farmers wife had to use whatever there was in the house to prepare a meal. When the emperor praised her for the cooking, she answered: "It was just 'Schmarrn'." And Franz Joseph returned: "Well, but then it was Emperor's Schmarrn."
