Bulgarian chopska


You need: (serves for 4)
8 tomatoes
1 big cucumber
200 g (7 oz) sheep's cheese (Bulgarian)
parsley

Peel the cucumber and dice it. Place the dices int the middle of a plate. Cut the tomatoes into pieces and place them at the edge of the plate. Grate the cheese right over the plate, then it will not stick together. (I do not recommend diced cheese.) Cut the parsley and sprinkle it over alltogether.

Chopska is a genuine Bulgarian dish, and they like to tell you that its green-white-red colours are the same as in the Bulgarian flag.
