Mushrooms Type Bernhard


You need: (serves for 4)
300 g (12 oz) small mushrooms (or sliced), a can will do
one half of an onion
3 - 4 stems parsley
1 clove garlic
50g (2 oz) wine-vinegar
50g (2 oz) water
half a tbsp french herbs *)
2 tbsp olive oil
salt
pepper

*) You can blend the french herbs yourself, if you can't buy them readymade. Take the same amount of oregano, rosemary, thyme, marjoram, basil, and a little less of estragon and blend them thoroughly.

The first time I ate marinaded mushrooms, was in Paris, a lot of years ago. I liked them very much, therefore I tried to get hold of a recipe, but I never found any. So I tried it on my own - and here is the result of many years experience. But of course you can vary the recipe after your own taste...

Start mixing the vinegar, the water and the french herbs. Chop the onion as small as possible. Do the same with the garlic. Remeber to use a knife to chop and crush it, don't ruin it in a garlic-press. Chop the parsley (or take a heaped tablespoon of dried parsley) and blend all the ingredients well. Add the mushrooms, add salt and pepper after taste and finally mix the olive oil into the dish. Leave it aside for some time (at least half an hour, but stirring it once in a while won't hurt) and serve together with white bread.
